Lots of places in WI have nice trails IF they have snow. Try Hayward way up, or go west toward Black River Falls, Lacrosse, Richland Center. Low traffic and scenic trails. Of course there aren't nearly as many bars, but what do you want to do - ride or drink? Many of the clubs have groomers and traffic during the week is nearly non-exsistent. Good luck.
