I think the dog was nervous, and after owning 6 Akitas, I beleive that it's an "old wifes tale" that once they have tasted blood etc. Watch him, praise him, give him the love he lacked. It's hard to adopt, I admire you. One thing I have found with Akitas, they are pack animals. This may sound cruel, but try to turn him on his back, and bite under his neck. when he stops squirming, you are the leader of "his pack". They are wonderful, loyal animals, but always remember, they are animals. If you grab his leash tightly, he will go into defense stance, relax the lead, he will relax.
Good luck, you habe the truest friend in the world!
