Ears come up at different times. Akitas that are raised indoors (more intellectual stimulation) have their ears come up earlier than those raised outside and only brought in a few hours a day. Some say gently(!) massaging the ears will stimulate the muscles and cause the ears to come up earlier.
I say, WHO CARES? They are beautiful either way.
The calcium thang is a MAJOR point of debate among Akita fanciers. Take everythang you hear about it with a grain of salt. The jury is still out on it.
