I've read through a great many informative posts here, and bookmarked the site for future reference. What an excellent resource - thanks to all who contribute.
Recently I obtained a reasonably low-mileage '82 F-250 which apparently came from California, as it has the EEC-III system and 7200VV carb. The carb is in bad shape, and I'm thinking this is an opportune time to pull it and the remainder of the EEC gear and replace with an Autolite/Motorcraft 2100. The engine appears to be the original 351W with stock 2BBL intake, and C6 auto trans.
FWIW, this will be an "around town" rig - for carrying dogs, groceries, and firewood. Nothing fast, just solid and reliable (because breaking down on the side of the road at -40 degrees really sucks, even when you have good winter gear.)
I've only ever rebuilt one carb before, and that was on a snowmachine when I was 14. But after reading through posts here and other online references it seems the 2100 is a good choice for a beginner's "first attempt." Older vehicles in the junkyards up here are pretty well picked over unfortunately, so I plan to get one off eBay (a pull from a vehicle, not a "remanufactured" one - you all have already saved me one big potential headache.

The one question I haven't found a solid answer for is what venturi size I should be trying to find for this engine. I've found a few w/ 1.23, which I found in an old parts reference listed for a 351 in the 70's. Meanwhile, other sources say a 1.21 is fine. I can't imagine the 5 CFM make a huge difference, but I'm a "do it right the first time" kinda girl, so would appreciate some more educated advice before I commit to anything..
Also, what general year range should I be looking at, or does it matter? Are the later versions of the 2100 better/different than one from the 60's?
