Okay, I love to cook and here is an offering of a delightful and tasty treat ! It's easy too !
This was inspired by a trip to the Caribbean and their lovely food.
Freaky Be Beautiful Rice And Beans:
Bean Mixture:
2 large red onions, peeled and chopped
2 tbsp virgin olive oil
1/4 cup red wine vinegar
1 red bell pepper
1 green bell pepper - each chopped
10 garlic cloves, crushed
1 can tomatoes
2 cans black beans 540 ml,drained
In large skillet, cook onions in oil until golden add bell peppers and cook 3 minutes larger, stir in vinegar and cook until liquid is reduced by two-thirds.
Add garlic, tomates (with liquid) and beans.
Simmer for 1 hour.
Rice:
1 cup rice 250 ml
2 cups water
1 cup petite green peas
2 tbsp chopped red pimentos
In saucepan cook rice until tender, about 20 min.
Then stir in peas and pimentos
Toppings:
4 green bananas
flour
2 tbsp virgin ol
salt to taste
1 large red onion
1 cup boiling water
10 drops hot sauce
4 navel oranges, Peeled and sliced, vertically
parsley for garnish
Peel bananas and cut each on diagonal crosswise in three pieces. Dredge in flour, Fry in oil, three pieces at a time, until browned, but not mushy, season
with salt.
Peel and cut red onion into 1/4 inch wedges, cut wedges in half and place in a bowl. Pour boiling water in bowl and let stand 5 minutes. Drain. Add Vinegar and hot sauce. Let cool.
To serve. form a ring with rice on large dish, place bean mixture in centre and sprinkle with parsley.
Serve with bananas, onions and oranges.

I wanted to mention the recipe serves 6
and to use only one can of black beans for a smaller portion. Tip: a pinch of honey or sugar will take the edge of the tomatoes' acidity. And go easy on the salt.
