As said above, it is basically just water vapor in the atmosphere being forced from vapor, to liquid because of a change in temp and pressure.
All my guns run liquid, so I see this all the time. Differences in temp, and humidity make a huge difference in the size of the vapor cloud produced.
This video was taken at about 60% humidity. About 70F

This video was taken at about 85% humidity. About 70F. You can see the cloud is bigger, and there is more dry-ice exiting the barrel. Not sure why
