I know it's over on the UnterGuild, but the post is like 15 pages long and has a great many big pictures in it, so I didn't want to repost it here in it's entirety.

The linked post is the compiled project log of my Springfield 1911 build (which I finished a couple of weeks ago).

I know it's not paintball, but it is a projectile launching device.
