I think Jim already answered that, but as for me the first obvious reason is cost. I already have a stock of sheet, it makes more sense to cut it than to buy strip material. Then there is convenience, I want a strip when I need it, and the easiest way to get it is to cut it from a sheet I already have.

But more than that there is the pleasure of modelling, which for me is solving the problems of how to make the bits I need with the material available to me.
