I don't think a spreadsheet would provide anything more than preliminary, educated guesses. For example, if a campsite (or campsites) is/are not available when you get to your destination lake can upset plans completely.
Wind and weather are also important, uncontrolled variables.

But, I suppose, putting plans on paper (or screen) does provide some sense of being in control. I do the same in another way. I make rather intricate packing lists, but always forget something, so my planning is also subject to uncontrolled errors. "To each his own".
