This guy has size going for him, but his attacks are fairly telegraphed, he doesn't really get all his power behind his punches. He uses simple attacks. He doesn't watch his fighting measure, nor does he do much more than simply punch at the guy; even if the guy has his guard up. Once I think I saw him "slap" down the guys guarding hands, but still missed with his punch. He's a simple "head hunter" brawler. He fights with experience of a street fighter, you can tell that; but he is still a crude fighter.
If I had to fight this guy, I'd rely on his lack of finesse, keeping the fighting measure and using it against him, low line attacks, and of course, interception. I'd do whatever I could to avoid a blow, true - even though he doesn't get nearly as much power as he should behind his punches, it would still freaking be damaging simply because he's so big.
If I couldn't get in on him, or my attacks were not doing any damage, I'd try to grapple him down. My guess is he doesn't know the first thing about it. It would negate his power and size, and possibly be much easier to knock him unconcious with a choke than trying to punch that rock of a head.
Of course, I say all this sitting safely behind my keyboard. Things change in actual combat... but hopefully I'd choose the appropriate route at the time.
